Mt Duneed Estate Single Vineyard Chardonnay
Winemaking: hand-picked with a mixture of whole bunch pressing of destemmed and crushed fruit. The juice was lightly racked to oak barrels for fermentation. At the end of fermentation, the wine was aged on yeast lees for 9 months in 30% new French barrels.
Vintage 2017 will be long remembered as the most compact growing season in living memory. A warm spring was followed by a warmer than average summer but without too many extreme heat spikes during the ripening period. The effect of this weather was the development of ripe stone fruit characters with plenty of crisp acidity to support the toasty oak flavours.
Occasion: Celebrate spring with a roast chicken.
