VARIETAL Cabernet Sauvignon
Region: Yarra Valley. Selected vineyards in the Lower Yarra Valley.
Winemaking: Destemmed and crushed grapes were fermented at moderate temperatures with regular pump overs to carefully extract colour and tannin. At the end of fermentation, 20% of the wine was aged in oak barrels for 10 months.
Vintage 2018 turned out to be a benchmark vintage in the Yarra Valley. It was a vintage of quality across all varieties with Cabernet Sauvignon an absolute standout. This wine is a true reflection of the Yarra Valley with its aromas of blackcurrants, blueberries and bay leaf, all underpinned by touches of cedar oak. The black and blue fruits on the palate are attuned with the fine grained tannins.
