Geelong Sauvignon Blanc

The grapes were once harvested were put to press where free run juice was run to tank and settled.
The juice was then racked to another tank and inoculated with aromatic yeast strain.
It was fermented cool over the next 2 weeks so as to accentuate the fruit flavours in the wine. It was then left on yeast lees for 3 months to add complexity and mouth feel before being cleaned up, stabilised, and then bottled.
2023 Sauvignon Blanc 12.0% alc, std drinks
Intense nose displaying passionfruit and gooseberries with hints of grapefruit. The palate is full and fresh with tropical fruits and green notes with a zingy acid finish.
Best enjoyed fresh over the next 2 years.
