Vintage Conditions: A mild to cool vintage allowed the grapes to retain natural acidity and develop full flavours without over ripening.
Vinification: Destemmed, and pressed to stainless steel tank. Free run juice separated from pressings. Racked and inoculated with a thiol producing yeast. Fermented at 18-20 degrees to produce varietal character. Matured on lees for 6 months to provide texture and complexity.
Palate: Grapefruit pith, tropical fruit, crisp, lingering acidity.
Appearance: Pale straw.
Bouquet: Gooseberry, tomato bush, capsicum, pink grapefruit, passionfruit.
Cellaring: Drink now or cellar for 3 years. Contains sulphites. Vegan friendly.
