Vintage Conditions: The 2023 vintage was defined by a cool growing season with mild weather during harvest. This extended growing season allowed the flavours to fully develop while also retaining natural acidity.
Vinification: Fruit was destemmed and then cold-soaked in open fermenters for 2 days prior to fermentation. Hand plunged twice daily. Pressed at dryness.
Palate: Kirsch, plush texture, velvety tannins
Appearance: Light Cherry Red.
Bouquet: Rhubarb, Raspberry, hints of Vanilla.
Oak: French oak maturation for 11 months.
Cellaring: Drink now until 2028. Contains sulphites. Vegan friendly.
