King Valley
Vintage Conditions: A cool and wet growing season kept yields low, and was followed by a mild and dry harvest, allowing fruit to ripen and retain aromatics and natural acidity. An outstanding year for white varieties.
Vinification: Hand-picked fruit was crushed, destemmed, and pressed to stainless steel tank, with pressings separated from free run juice. Racked and inoculated with a selected aromatic yeast. Cool fermented at 16 degrees to retain varietal freshness. Matured on lees for 6 months to gain texture and weight.
Palate: Fresh pear, Guava, crisp, textural.
Appearance: Pale straw.
Bouquet: Nashi pear, tropical fruits, lemon citrus.
Cellaring: Drink now or cellar for up to 3 years. Contains sulphites. Vegan friendly.
